• 1 medium golden onion, chopped very small.
  • 1 garlic clove grated.
  • ½ small red peppers, chopped into small cubes.
  • 1 zucchini chopped into small cubes
  • Handful of sweet corn.
  • 2 tbsp finely chopped coriander leaves
  • 6 medium eggs.
  • 1 tbsp of olive oil for sautéing the vegetables plus a little extra for the egg mixture.
  • 100 ml Nut milk , I used almond.


  • Preheat oven 350 C
  • Place all the small chopped vegetables in a pan and sautee.
  • Remove them all and place in a bowl
  • Add the eggs and whisk.
  • Add salt and pepper
  • Heat the muffin tray before adding the mixture for 5 min.
  • Place the mixed egg mixture into the muffin tin.
  • Cook for 12 min. until eggs are set and puffed.
  • Flip the tray and serve
  • Garnish w chives.
