• 1 big head of cauliflower
  • Arugula for the salad

Preparation for the cauliflower

  • Boil the cauliflower with 1 tbsp of salt for 20 min.
  • Strain and set aside


  • 2 tbsp Dijon mustard
  • 3 tbsp olive oil
  • Salt
  • 1 crushed garlic
  • 1 tbsp cumin


  • Mix all the dressing ingredients except for the cumin. Pour it over the cauliflower and just before baking it at 350 C for 40 min sprinkle the cumin on top.
  • Have extra dressing on the side with out cumin and use it to add more dressing to the arugula cauliflower salad
