Tomato and red capsicum soup

Ingredients:

  • 1 medium onion, roughly chopped
  • 1 garlic, chopped
  • 2 red capsicum, chopped
  • 12 pieces of cherry tomato, chopped
  • 1/2 cup water
  • 1 tbsp olive oil
  • Salt and pepper
  • 1/4 cup coconut milk at the end

Preparation:

  • Sauté the onion and garlic till the aroma comes out
  • Add capsicum and continue sauteing for 2 min
  • Add the tomato
  • Add 1/2 cup water
  • Cook for 10 min
  • Put all in the vitamix and blend.
  • Bring back to the pot and add the coconut milk and stir for 2 min.
