Zucchini spirals, lentil & avocado salad

Ingredients:

  • ¼ cup lentils, boiled
  • 1 avocado, cubed
  • 2 medium size zucchini’s made into spirals
  • 1 tbsp Mint leaves for garnish
  • ½ chopped white onion, medium size

Preparation:

  • Boil lentils with onion for flavoring. Discard once boiled.
  • Mix all the ingredients together and garnish with the mint leaves.

Dressing:

  • Lemon juice
  • olive oil
  • salt and pepper.
