Zucchini spirals, lentil & avocado salad
Ingredients:
¼ cup lentils, boiled
1 avocado, cubed
2 medium size zucchini’s made into spirals
1 tbsp Mint leaves for garnish
½ chopped white onion, medium size
Preparation:
Boil lentils with onion for flavoring. Discard once boiled.
Mix all the ingredients together and garnish with the mint leaves.
Dressing:
Lemon juice
olive oil
salt and pepper.
