Okra Soup


  • 1 packet frozen baby okra 400 g
  • 1 can tomato
  • I finely chopped onion
  • 4 small garlic cloves chopped finely
  • 1 tbsp tomato paste
  • 1 tbsp Shatta / hot pepper paste
  • 1 tbsp sweet pepper paste
  • Bunch of coriander for garnish
  • 3 cups water and organic chicken stock
  • 3 tbsp of olive oil
  • Salt to taste


  1. Fry the chopped onion and garlic in the olive oil. We want to keep it crunchy don’t wilt it.
  2. Add the okra and sauté until the slimy part goes away
  3. Add the pastes and mix all together
  4. Add the canned tomato, hot water, chicken stock mix all together and taste. Then add some salt


Let it boil for a few minutes then lower and simmer for 30-40 minutes

Garnish with chopped coriander leaves.
